Driving system - Royat cord.
Harvest in the 3rd week of September, 100% harvest by hand.
Ageing:
18 months in used French oak barrels.
Vinification:
The grapes go directly to the press with destemming without crushing, 48 hours of cold decanting; 100% fermentation in vat.
Aroma:
Gooseberry, plum, black cherry and spices.
Taste:
Tobacco, cedar and anise notes in a long and elegant finish.
Gastronomy:
Fresh goat cheese, oysters, grilled fish, seafood risotto with grouper.
