Vineyard aged 43 years / 3 ton, 9,000 plants per hectare, orientation: NW-SE. Vineyard C - 115km from the Atlantic coast at 460m altitude, 6 years old / 2 ton. 4,000 plants per hectare, orientation: NW-SE. Vineyard D - 110km from the Atlantic coast at 280m altitude with 7 years / 3.5ton. 5,500 plants per hectare, NW-SE orientation.
40% of the batch aged 6 months in used French oak.
The grapes are de-stemmed and crushed directly into the vat; 3 days of cold immersion; alcoholic fermentation starts at 12ºC and ends at 32ºC; malolactic fermentation in used French oak (40% of the wine)
