Past: old, elapsed, aged. The result of careful vinification and a long period of aging in French oak barrels, this Caminhos Cruzados – Passado is born. Made from the Encruzado variety and forgotten until it reached its full potential, this wine now presents itself with aromas that only the passage of time can offer.
The Encruzado variety is recognized for its superior capacity for positive evolution, both in barrels and bottles. The Past exploits precisely this characteristic, in this case a long period of maturation under oxidative conditions in used French oak barrels.
The result of the practice used is a wine of great aromatic complexity, which combines tertiary aromas of evolution, such as fresh apple, banana and ripe peach, with notes of dried fruits, tea leaves and vanilla.
In the mouth, it presents great volume, tempered by an excellent and striking acidity characteristic of the variety.
Soft and blue cheeses, roasted cod, ash olives from Espada à Cinta.
