Battonage in vat until bottling (April 2011) / 30 months of aging in bottle.
The grapes go directly to the mill without destemming or crushing; 24h cold decantation; fermentation at 17ºC; 100% malolactic fermentation.
It presents itself as a complex wine, with notes of cereal, brioche and apple.
Apple and brioche with a creamy, crunchy palate and a long, spicy finish.
Brie and Gouda cheese, olives, almonds, potato chips, smoked salmon, ham.
